- 3/4 cup pitted prunes
- 1/4 cup boiling water
- 2/3 cup oil
- 1 cup sugar
- 2 tablespoons cocoa powder
- 2 teaspoons ground cinnamon
- 1 teaspoon salt
- 1 teaspoon vanilla
- 2 eggs
- 1 cup buttermilk
- 2 1/2 cups flour
- 2 1/2 teaspoons baking soda
- 2 teaspoons baking powder

Ingredients
- 3/4 cup pitted prunes shopping list
- 1/4 cup boiling water shopping list
- 2/3 cup oil shopping list
- 1 cup sugar shopping list
- 2 tablespoons cocoa powder shopping list
- 2 teaspoons ground cinnamon shopping list
- 1 teaspoon salt shopping list
- 1 teaspoon vanilla shopping list
- 2 eggs shopping list
- 1 cup buttermilk shopping list
- 2 1/2 cups flour shopping list
- 2 1/2 teaspoons baking soda shopping list
- 2 teaspoons baking powder shopping list
How to make it
- Soak prunes in boiling water 30 minutes. Drain and set aside.
- Combine oil, sugar, cocoa, cinnamon, salt and vanilla in bowl. Add eggs
- and beat well 2 minutes. Combine soaked prunes and buttermilk in blender
- container or food processor bowl and chop finely. Add to oil mixture with
- flour, baking soda and baking powder. Beat well.
- Turn into well-greased and floured 13x9-inch baking pan or 2 (8-inch)
- round layer-cake pans. Bake at 350 degrees 30 minutes, or until wood pick
- inserted near center comes out clean.

- The original recipe called out for a chocolate fudge icing made with:
- 1/4 cup water
- 1/4 cup vegetable shortening
- 1/4 cup white corn syrup
- 2 cups sifted powdered sugar
- 1/2 cup cocoa powder
- 1/4 teaspoon salt
- 1/2 teaspoon vanilla
- Bring water to boil. Remove from heat and beat in
- shortening and corn syrup. Add powdered sugar, cocoa, salt and vanilla.
- Beat to spreading consistency.
- I use a recipe for a Sour Cream Chocolate Frosting from a recipe I'll post separately.

OMG, I am thrilled that I finally found this recipe after 40+ years! I worked for an American (Loma Linda) dentist in Zimbabwe who's wife made the heavenly Chocolate Prune Cake and would bring it to the dental office, (yes, I know). For one reason or another, she would not share the recipe. Guess who will be baking up a storm to make up for lost time. Many thanks for sharing.

This cake is a warm fuzzy from my youth and I’m anxious to try the recipe. My grandparents lived in Loma Linda as I grew up
(just turned 60 this year) and Chocolate Prune Cake was THE Cake for all birthdays, kids and adults. Where is your Sour Cream Chocolate Frosting posted? I’ve been unsuccessful in locating in. I buy his cake every week from the Loma Linda Market. It is delicious. The texture is moist and it is very chocolatey. No, you do not taste the prunes (which are only plums remember) and they will only make you have to use the bathroom if you eat waaay too much. Ask me how I know this. I want to try the recipe to see if it is as delicious as the one from the market or do I just like my weekly ritual of shopping for food to eat after Sabbath service.

I made it last night & it's just as tasty & moist as ever. Maybe my memory is off, but did the icing also include some finely chopped prunes in it?

I remember this cake as a 3rd grader. Mom & Dad were working on their Masters and Dad would bring home one every Friday for Sabbath dinner. I will have to try it and see if it is as I remember. I am now 53, so maybe my taste buds have changed. LOL

I was so excited to find this recipe as I am the granddaughter of the man that created it as he was the baker at Loma Linda Bakery. I recently found this recipe in my mom's recipes in her handwriting which made 2 great memories. Enjoy..this recipe is awesome. The only difference in his recipe we have is that he used 1 1/2 tsp baking soda instead of 2 1/2.

I worked at LLUMC and this cake was always there for birthdays and special occasions. It is the best cake in the world. One question: Does anyone know if it can be made without flour?

Thank you, thank you ! I moved from San Bernardino to the outbacks of Nevada 11 years ago and I am desperate for a LL prune cake! I grew up on it. They used to pack and ship them, but no longer. I'm heating up the oven right now!!

My parents used to live in LL but retired and moved away. Mother is gone now. Brother still in LL. Small world. Thanks again.

Many years ago I had two cookbooks written by staff and spouses of Loma Linda U. Medical Center. I believe they were titled "An Apple a Day" or something similar. They were very helpful to me in learning to cook veg. But they disappeared, as good cookbooks eventually do. Thanks for the cake recipe.

We come from a long line of Catholics- my Grandparents came from Sicily, my mother is the only one who has converted to The Seventh Day Adventist Church, my sister also. Not that I'm Catholic either, I'm more of a believer in my heart.
Thanks for the recipe. I printed it out and am going to send it to my mom. She won't make the Icing. I will wait to see what your icing looks like.

I come from a long line of SDA, according to my mother - who wasn't. But having been born and raised in Hemet, and knowing Loma Linda was THE biggest hospital near us - I grew up learning a lot from them. Doesn't hurt that I work with a lot of Hindu Jains now, does it? ^^ (BTW, I love vegetarian food - and eat it by choice, even though I'm rather omnivorous by trade.)

I grew up Seventh Day Adventist- so I knew right away about Loma Linda. I will make this cake sounds good. I miss their hot dogs!
Do you go to 3abn? my mom is a STRICT vegetarian and goes there for her recipes.
