Learn how to make Instant Pot carrot halwa or gajar ka halwa. This is a delicious Indian pudding made with grated carrots, sugar, milk and with some cardamom powder.

This month theme for the challenge is "Warm desserts "which is suggested by Rafeeda who blogs at The Big sweet tooth. She as a wonderful collection of recipe and one of my favourite recipe from her blog isLime Olive Oil cake.
My partner for this theme is Narmadha who blogs at Nams Corner. She gave cardamom and Ghee as my secret ingredients. I gave her sugar and sago as her secret ingredients and she came up with a delicious Semiya Javvarisi payasam
INGREDIENTS TO MAKECARROT HALWA
INSTANT POT CARROT HALWA RECIPE WITH STEP WISE INSTRUCTIONS:
INGREDIENTS:
- Grated Carrots - 2 Cups
- Ghee/clarified butter - 2 Tbsp
- Cashew nuts - 2 Tbsp
- Raisins - 1Tbsp
- Milk - 1 Cup
- Sugar - ½ to ¾ cup
- Milk powder - 2 Tbsp(optional)
- Cardamom powder - ½ Tsp
PREPARATION:
Place the inner pot inside the Instant Pot.
Switch on the sauté mode. Once the inner pot is hot. Add ghee.
Now add cashew nuts,raisins and saute them until they turn into golden colour.Once they golden take them into a bowl and keep aside.
Then add grated carrot and sauté for 5 minutes. Add milk and mix well.
Now cancel the saute mode.Close the lid and keep the valve in sealing mode.
Select pressure cook mode and set to high pressure for 5 minutes.
Once the cooking is done, allow the pressure to release naturally.
Open the lid and switch on the saute mode.
Add sugar and mix well. Cook on saute mode until it thicknes (it takes approx. 20 minutes)
Now Milk powder, cardamom powder and stir well. Cook for 2more minutes. By now the carrot halwa will be thick enough.
Finally add roasted nuts and mix well.Enough the delicious halwa warm or cold. I personally enough when it is warm.
NOTES:
You can store this in an airtight container and keep it in refrigerator for 2-3 days.
Before serving microwave it for 30 seconds and enjoy.
Adjust sugar quantity according to your taste.
Adding milk powder to the halwa gives a nice texture when you eat. But this is optional.
